You pick all of this before you begin the main quest and have a chance to change your mind before exiting the tutorial levels and into the real world.

Did I mention that the world is huge? Not only do you have access to a huge open world, you can transfer through the Oblivion gates, basically giving you a second world to explore. There are tons of enemies in these Oblivion worlds, plus the enemies on the over world. There are some places that are off limits for a while, you have to complete certain goals and objectives first, but there are tons of places to explore.

You could literally walk through the forest for ten minutes and then happen upon some ruins that happen to have underground tunnels running under the countryside. These ruins and castles are scattered throughout the world and once you discover them, you can warp back and forth between discovered places.

There are many stats to level up, in Oblivion. The game also has a day to night cycle, to keep track of the time spent on a quest. Some character timelines allow them only to be available during day or night. Since most places are closed at night, it is a good time to get rest and sleep, to ensure your health and stamina does not decrease.

The graphics are very good; they are as good as anything else Ive seen on the system. There are many weapons and gear to collect and some things you can buy, but lots of things you can find along the way. The main quest is available at all times and there are many side quests. The menu helps you keep track of all the different quests you are currently working on and lets you know when you have completed a quest. The main story isn't as compelling as I would have hoped in such a big budget, high profile game, but it is serviceable and passable.
